The Melt Clock: How to Time This Drink

This is the part worth paying attention to, and it applies to no other bubble tea we make. Think of it in three windows.

Minutes 0–3 — the dessert window. The scoop is still a scoop. Use the spoon end of your straw and eat some of it on its own, or take your photo now, because this is when it looks best.

Minutes 3–10 — the strawberries-and-cream window. The scoop has softened into the top of the blend. This is the sweet spot for most people, and it's the version we'd hand a first-timer. Creamy, fruity, smooth.

Minutes 10 and after — the sharp window. The cream is fully mixed in and the strawberry tartness comes forward again. Some people prefer this. It's cleaner and less rich, and the lychee jelly at the bottom tastes better against it.

No wrong answer here. But if you know you're a slow drinker, order it knowing you'll mostly get the third version. If you want the creamy middle window, don't get distracted for fifteen minutes.

Why Lychee and Strawberry Go Together

Lychee is the part bubble tea newcomers hesitate on, usually because they've never had it.

Lychee is a small tropical fruit with white flesh and a floral, perfume-like sweetness. It's often compared to a grape crossed with a rose — sweet, a little musky, more aromatic than sugary. As jelly it turns springy, with more bounce than the pearls in our milk teas.

Paired with strawberry, it does something specific. Strawberry is bright and tart but its aroma is fairly simple. Lychee's floral note sits underneath and makes the whole cup smell and taste more like a full berry dessert than a strawberry slush on its own. It's the same reason bakers put rose water or vanilla in a berry tart.

If you're unsure about lychee, order this anyway. The jelly is at the bottom, so you can taste one cube and decide before you commit to a whole cup of it.

How to Order It

Sugar level: 30% or 50%. Of every bubble tea on our board, this is the one people most often order too sweet. The jam is sweet and the ice cream is sweet. This is one of the few drinks where we'd nudge you toward 30% even on your first try. At full sugar the tartness disappears entirely and you lose the strawberry.

Ice: regular. It's a blended drink, so the ice is what gives it body. Cutting it gives you a thin cup.

Ask for a spoon straw and a spoon. The straw handles the lychee jelly. A real spoon is better for the scoop.

Getting it to go? Ask for the ice cream on the side in a small cup. It'll survive the drive, and you can add it when you get there. Most people don't know to ask.

Dairy: yes, it has ice cream and dairy in the blend. Not a dairy-free drink.

Swap option: if lychee jelly isn't your thing, pearls work here too, though you'll lose the floral note that makes this version work.

Two things about this bubble tea come down to the shop rather than the recipe.

The scoop has to be firm when it goes on. A soft scoop collapses into the blend immediately and you skip straight to the third window with no dessert phase at all. That's a storage and handling thing, and it's why we don't pre-portion scoops and let them sit.

Lychee jelly has a short window once it's opened. Fresh, it's springy and snaps between your teeth. Left too long, it goes soft and loses the bounce that makes it worth having. We work through it fast.

Georgetown stays warm well into October, and this section of the board carries those weeks. It functions as a dessert shop as much as a bubble tea board.

Strawberry w/ Lychee Jelly & Ice Cream is the one this post is about — the menu-board name for it. Oreo w/ Pearl is the cookies-and-cream pick, thick with cookie pieces and chewy pearls underneath. Taro w/ Pudding is soft, nutty and purple, finished with silky pudding. Thai Tea w/ Pearl blended is warm-spiced and creamy. Coffee w/ Ice Cream has a mild bitter edge under a scoop. Mango w/ Ice Cream is the bright yellow one. Peach Tea w/ Lychee Jelly is the lightest of the group and uses the same lychee jelly if you liked it here. Lava Flow layers mango with a spicy peach purée for a flowing "lava" effect.

Halo Halo is our Filipino-inspired build, made standard or as Halo Halo Ice Blended. Both are stacked and layered and eat like a sundae.

Ice Cream Shop Orders Without the Extra Stop

Three drinks on our board come with a real scoop, which covers an ice cream shop craving in the same visit.

This one is the fruit-and-cream version. Mango w/ Ice Cream is the tropical version — sweeter, less tart, no jelly. Coffee w/ Ice Cream is the version for adults who want the bitterness underneath.

If you like the strawberry-and-vanilla combination, the mango one is the natural second visit.

A Cafe That Lets You Stay

We work as a cafe as much as a takeout window, and a bubble tea here usually outlasts the errand that brought you in. Students from Southwestern settle in with laptops, friends catch up after walking the Square, and parents take a quiet half hour while the kids have something cold.

This blended drink won't last a long study session, though. For that, our Milky Series holds up far better. Classic Pearl Milk Tea is the standard everything gets measured against. Not everyone in a group wants a pink bubble tea. We run as a coffee shop too.

Coffee Creama is cold coffee under a salted cream cap, meant to be sipped through. Coffee Milk Tea w/ Coffee Jelly puts cold-brew-flavored jelly cubes into milk tea. Coffee w/ Ice Cream is the blended one, and it's the direct counterpart to this strawberry drink — same scoop on top, opposite flavor underneath.

Juice Shop Flavors if You Want It Lighter

If a scoop of ice cream is more than you're after but you still want strawberry-adjacent fruit, this section is where to look. It works like a juice shop, except everything is built on brewed tea rather than syrup and water.

Berry Lychee Burst is the closest relative to this drink without any dairy — berry and lychee together, light and floral. Mango Green Tea is the easy starting point. Passion Chess comes in tart. Peach Tea w/ Honey Jelly is gentle. Mango & Passion Fruit Tea balances sweet and sour. Honey Lemonade is the hot-afternoon standby.
